Is it normal that when I dig in my map, I discover a lot of giant caves ?

Yes that is normal.
It is regional however, some places have huge caves and some places do not have caves at all.
Can I generate a map without these caves ?

Not at the moment sorry, the generation algorithm still needs to be changed
Are you still tweaking the generation? The landscape generation is my favorite part of the whole code.
