Hello. I was wondering how many players I am able to handle with Cuberite compared to paper spigot? btw using the latest build I was able to one hit all mobs. Any ideas why and how to fix that?

It depends on the hardware you run the server on. I'm running a (quite stripped down) server on an old RasPi1B board (512 MiB RAM) and it was capable of hosting 7 players. On a decent desktop-class computer it can host tens of players, mostly limited by the available RAM.
