As long as there are no recipe-related errors in the server log, you should be fine.
The oceans happen because MCServer doesn't filter the spawn position, so it happens to be in the middle of an ocean 80% of the time. Try a different seed (in world.ini, need to delete the Region subfolder to regenerate the world), or just fly around for a while, you'll find some land.
