No idea where to get started on this one.

I haven't looked very much into the code of mob movement yet, but the little bit I've seen looks like it's designed for x and Z only.

Wait why do you want mobs to fly ?
Currently i do see mobs just warp to tree tops even though a cow shouldnt be able to do that.
For a chicken it actually looks nice though.
And perhaps for squid to not be able to be on land and not on top of water but in the water instead ?
You might wanna look into stuff like that first :p.
