I think that there should be a dedicated 1.8, 1.9, etc.. version of cuberite because I have a 1.8 Cuberite server, but when you craft a 1.9+ item, the client crashes because it can't find the item / block in the data, causing it to crash. Whether it is a plugin or different software, I want my players to not have their client crash whenever you accidentally craft the item.
